Chef de Partie


A new upcoming hotel based in Nairobi’s up-market area, is seeking to fill the following
position:

4. CHEF DE PARTIE (3 Positions)
We are recruiting chefs in both the hot kitchen (saucier and entrementier) and cold kitchen (Ladd/ Salad section,
Butchery, and Pastry)
Location: Nairobi, Kenya

Brief Description
The Chef de Partie will be responsible for the running and controlling a given section within the
kitchen to the standards laid down.

Detailed Description
 Creation of high quality dishes in his role as part of the kitchen team
 Cooking consistently and enthusiastically on a high level as directed by the Sous Chef
 Ensuring that his/her station and environment is kept hygienically clean and also working in
a hygiene manner
 To ensure that all dishes are being prepared to the correct recipe and quantity
 To ensure that all dishes reach the hot plate or pass correctly garnished the correct portion
and size presented on the prescribed serving dish in the prescribed manner.
 Controlling incoming goods and storing them in perfect conditions
 Assist the Sous Chef in menu planning and or ideas as required

Job Requirements
Knowledge, Skills, Experience, Competencies
 Holds a Certificate or Diploma in food production or culinary arts
 Have at least three years experience in a similar position in the hotel industry
 Knowledgeable about culinary industry and food preparation
 Organized and work well in a high stress environment
 Knowledge of hygiene and safety standards in the kitchen and possess discipline to enforce
those standards
 Flexible and able to work in rotating shifts
