upcoming hotel based in Nairobi’s up-market area, is seeking to fill the
following
position:
2. SOUS CHEF (1 position)
Location: Nairobi, Kenya
Brief
Description
The Sous
Chef will be responsible for assisting the Executive Chef in overall management
and
control
of the kitchen while ensuring that food revenue and profit targets are met.
He/she will
adhere to
the hotel policies and maintain cleanliness of the kitchen.
Detailed
Description
Through and hands on
approach, maintain and improve standard of product, introducing
more
variety of menus
Direct, supervise and
participates in the preparation, seasoning, cooking and baking of foods
in the
hotel
To ensure that all Chef De
Parties are familiar with the day’s requirements
To ensure that the
necessary stocks are on hand at the right quality and quantity.
To ensure that timetables,
leave rosters and attendance registers are up to date
To ensure that all
statutory and hotel hygiene regulations are being strictly adhered to
Maintain and improve
standard of service and operating standards, ensuring maximum guest
satisfaction
Implement and monitor all
Health, Safety and Hygiene practices and procedures
Job
Requirements
Knowledge,
Skills, Experience, Competencies
A Degree or Diploma in
Food Production
Minimum 5 years solid
experience throughout hotel kitchens up to Sous Chef level in similar
or larger
size operation or Head Chef in smaller unit
Good understanding of all
applicable Health & Safety legislation
Full understanding of food
controls and experience of ordering and menu pricing
Self motivated and able to
motivate others to achieve
Has coaching and team
building skills
Desire and ability to
deliver quality food
Experience of large volume
functions and weddings
