Executive Chef



A new upcoming hotel based in Nairobi’s up-market area, is seeking to fill the following
positions:

EXECUTIVE CHEF (1 position)
Location: Nairobi, Kenya

Brief Description
The Executive Chef will be responsible for developing the reputation of the hotel through
planning, preparation and production of quality food for all food and beverages outlets and
banquet facilities within the hotel. You will also be responsible for the administration and smooth
running of the kitchen and staff.

Detailed Description
 Creating menus that meet and exceed customer’s needs while conforming to brand standards.
 Ensuring the consistent production of high quality food throughout all hotel food outlets.
 Developing customer relations through pro-active interaction with guests.
 Effective management of the department including budgeting, forecasting, resource
planning and waste management
 Excellent leadership of the kitchen brigade ensuring ongoing development of team members
and putting in place an effective approach to succession planning.
 Maintain an exemplary standard of hygiene in accordance to the Hazard Analysis Critical
Control Point (HACCP) guidelines.

Job Requirements
Knowledge, Skills, Experience, Competencies
 Have a formal professional training in food production obtaining a Degree from a relevant
hospitality training institution
 Previous relevant experience as an Executive Chef or Sous Chef in a Hotel.
 Excellent management, supervisory and leadership skills and experience
 A creative approach to the production of high quality food with strong skills in buffet style
food
 Must possess a deep knowledge of menu planning and engineering
 Have a business focused approach to managing a hotel kitchen
 A people person, strict on follow up, hygiene, training and quality control
 Excellent communication skills in both spoken and written English
 Relevant computer skills and use is essential
